What is a crackling? A crackling is a fried pork skin taken from the shoulder region of a hog. The shoulder skin is a tougher texture and has less subcutaneous fat when compared to the back and belly. As a result, when cooked, this part of the hog has a harder and crispier bite than a pork “rind”. Lastly, cracklings contain small pieces of meat that adhere to the skin.
