This is what vegetable DREAMS are made of! A variation of this salad was once brought to a family dinner at my in-laws and we immediately loved it. That's probably because it had lots of crispy bacon pieces in it... We stole the idea, removed the non compliant ingredients (croutons, canola oil based mayo, sweetened dried fruit, and cheap sunflower oil) and subbed in all the good Paleo stuff. This broccoli salad is made with our favorite mayo from Primal Kitchen and unsweetened cranberries (or raisins).
Since there are no added sweeteners of any kind, this dish is totally Whole30 compliant. Not only is it sugar free, it's full of protein, good fats and green veggies. Our favorite part about this salad, besides the bacon of course, is that you can prep this well ahead of time. It will last easily in the fridge for up to a week, assuming it doesn't get gobbled up sooner.
P.S. Word on the streets is that kids will eat this salad, no questions asked! Talk about getting them to eat their veggies!
